It’s no joke! Beloved Seattle sandwich shop — Paseo — set to reopen with new owner

SEATTLE — A federal judge approved the bankruptcy sale of Paseo, a famously popular Seattle sandwich shop, to a new owner.

According to the Seattle Times, new owner Ryan Santwire plans on reopening the Fremont restaurant as soon as possible. He told the newspaper that he plans on making no changes whatsoever.

“We got the people, we got the stuff,” Santwire told the Times. “When it’s all said and done, it should be just opening the doors again.”

Santwire bought the restaurant last week for $91,000 in a bankruptcy auction.

Paseo filed for bankruptcy last month. Part of the company’s liabilities include unpaid wages to more than a dozen workers and money owed to vendors and utilities, documents first obtained by the Times stated.

The company also appeared to owe an unspecified amount of taxes to the Internal Revenue Service and the Washington state Department of Labor and Industries.

The announcement of Paseo’s closure sent hunger pangs through the stomachs of many Seattle foodies. The restaurant was known to have a huge following lines out the door during all hours of the day.

The new owner has reportedly rehired the same cooks and held a secret session with them last week to recreate Paseo’s delicious Cuban recipes.

    cant wait to hug my friendly wait staff and cooks, they all were a part of our ritual Sundays! I miss them and they are excellent cooks! Plus the new owner will be in for a real surprise, his staff are so good and kind, and he will make plenty of money to pay them and everyone else. This is one of the best buys he will have ever made. I hope the staff are rewarded generously and given the best wages and care.
