Zucchini Apple Slaw
2 cups grated zucchini
1 medium Granny Smith apple, grated
1 large carrot, grated
½ cup coconut cream
2 tablespoons apple cider vinegar
2 tablespoons orange or lemon zest
Mix all ingredients together and let stand in the fridge for about 30 minutes for flavors to combine. Holds well in the fridge for 1-2 days.
