Mini Chorizo Egg Bakes

Where did this recipe came from?: Made it up after watching countless hours of food network in college

Note: You can switch out ingredients for anything you would typically add to an omelet.

6oz Chorizo

-brown and allow to cool

6 eggs

-Whisk, add 1/8 Cup Half and Half

-Salt, pepper, hot sauce, cayenne pepper to taste

6oz Mexican Cheese Blend

Any type of bread

-cut into cubes

Grease muffin pan

Serve with sliced avocado, cilantro, salsa, sour cream

Bake at 300 degrees for 10 – 15 minutes, until golden brown
