Paseo sandwich shop has reopened under new management

SEATTLE -- Paseo Caribbean Restaurant in Fremont has reopened.

Paseo Caribbean Restaurant in Fremont has reopened. With the same menu as before.

An employee at the beloved restaurant said they opened up around 12 p.m. Thursday after being closed since November.

The restaurant will be closed on Sundays and Mondays, the employee said, but is otherwise operating a full schedule.

The shop -- which previously struggled with debt and employee pay -- is under new management, an employee told Q13 FOX News.

It was not immediately clear if the Ballard shop would also open for business.

The announcement of Paseo’s closure sent hunger pangs through the stomachs of many Seattle foodies. The restaurant was known to have a huge following, with lines out the door all hours of the day.

Last month, a federal judge approved the bankruptcy sale of Paseo to a new owner. According to the Seattle Times, new owner Ryan Santwire planned to reopen the Fremont restaurant as soon as possible after the sale. He told the newspaper that he would make no changes whatsoever to the menu.

The new owner reportedly rehired the same cooks and held a secret session with them to recreate Paseo’s delicious Cuban recipes.
